Soup might not be a first thought for summer dinners but after seeing these gorgeous fresh tomatoes at our local farmers market I knew they would be a part of our dinner that night. I also love any crock pot recipes on days where I know we will be busy later in the day. I can make it in the morning and it's ready to go whenever we have time to eat later. This recipe is extremely easy to make and with no creams used it's a perfectly
healthy dinner option!
Ingredients:
- 5 fresh tomatoes, quartered
- 1 medium onion, chopped
- 2 Tbsp of olive oil
- Fresh basil, save some to sprinkle on top of soup when finished
- 4 garlic cloves, minced
- 1 14oz. can of diced tomatoes
- 2 cups of vegetable or chicken broth
- Red pepper flakes, depending on how much spice you want
- Salt and pepper to taste
Directions:
- Pour in 2 Tbsp of olive oil into crock pot on medium heat.
- Add in chopped onions and minced garlic cloves, let cook for two minutes.
- Add in the rest of ingredients and cook on low for 4-6 hours.
- When you are ready to eat, pour soup into blender and puree until smooth.
- Sprinkle on top the remaining fresh basil and serve warm.
